Chocolate Chip Coconut Cookies
Homemade healthy Valentine's Day cookies from me to me! Show your sweetheart or yourself some love with this super easy coconut-flavoured treat, free from gluten, dairy, refined sugar and eggs.
Ingredients:
1 cup gluten-free plain/all purpose flour of choice
1/4 cup unsweetened desiccated coconut
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/4 cup coconut oil, melted
1/3 cup honey
1 tsp vanilla extract
1/3 cup chocolate chips
Baking sheet lined with foil
Heart shaped cookie cutter (optional)
Directions:
1. Preheat the oven to 350 degrees F
2. Combine flour, coconut, baking powder, baking soda and salt in a large mixing bowl.
3. Combine coconut oil, honey and vanilla extract in a medium sized bowl. Use a whisk and mix well.
4. Pour the wet mixture into the bowl of dry ingredients and mix with a wooden spoon. Add chocolate chips. With your hands, compress the cookie dough into a ball, making sure the chocolate chips are incorporated.
5. Take approx. 1 tablespoon of cookie dough into your hands at a time, compress it and roll into a ball. You can either flatten the balls slightly on the prepared baking sheet to make round cookies, or you can press the ball of dough into the cookie cutter to mould into a heart shape.
6. Bake for 10-12 minutes, until they start to brown slightly. Remove from oven and allow to cool for at least 5 minutes before serving.
