Our trip to Cork was a quick one, but we managed to find a delicious brunch at the Spitjack Grill. This is one of the most gorgeous restaurants I've been to and was a lucky find as we hurried around the city looking for a place to enjoy a quick meal before heading back to the bus. The place was bustling and we were really fortunate they could seat us. And check out that vegan feta! Divine.
Quick meal, a photo op on the bridge and then we hustled back to the bus!
Another stop on the bus for this busy trip was at the Rock of Cashel:
'Set on a dramatic outcrop of limestone in the Golden Vale, the Rock of Cashel, iconic in its historic significance, possesses the most impressive cluster of medieval buildings in Ireland. Among the monuments to be found there is a round tower, a high cross, a Romanesque chapel, a Gothic cathedral, an abbey, the Hall of the Vicars Choral and a fifteenth-century Tower House.
Originally the seat of the kings of Munster, according to legend St. Patrick himself came here to convert King Aenghus to Christianity. Brian Boru was crowned High King at Cashel in 978 and made it his capital.
In 1101 the site was granted to the church and Cashel swiftly rose to prominence as one of the most significant centres of ecclesiastical power in the country.'
Never underestimate the vegan options at the convenience stores in Europe. This vegan sandwich was launched by Circle K in 2019. Usually veggie sandwich options are of the grilled veggie or hummus variety, so it was nice to find a vegan BLT for a change.
Cork is a great fabric to work with and provides a really hard wearing handbag. I especially like the ethnic look to this handbag with the feathers.
