Ingredients: 4 large russet potatoes. 1 cup cooked black beans. 1 cup diced tomatoes. 1 cup corn kernels. 1/2 cup diced red onion. 1/2 cup sliced black olives. 1/4 cup chopped fresh cilantro. 1/4 cup vegan sour cream. 1/4 cup sliced green onions. 2 tablespoons nutritional yeast. 1 tablespoon olive oil. 1 teaspoon paprika. Salt and pepper to taste.
Instructions: Preheat oven to 400F 200C. Scrub potatoes and pierce them several times with a fork. Rub potatoes with olive oil, sprinkle with salt, and wrap each in foil. Bake potatoes for about 45-60 minutes, or until tender. Meanwhile, in a skillet over medium heat, warm black beans, corn, and diced tomatoes. Season with paprika, salt, and pepper. Once potatoes are done, carefully unwrap them and slice each one open. Fluff the insides with a fork and top with the black bean and vegetable mixture. Add a dollop of vegan sour cream on top of each potato. Sprinkle with nutritional yeast, diced red onion, sliced black olives, sliced green onions, and chopped cilantro. Serve hot and enjoy!
