Vegan Pumpkin Spice Syrup
The second the leaves begin to fall off the trees, us girls need our pumpkin spice lattes, right?! Since Starbucks don't offer a vegan pumpkin spice it was completely essential to make my own. This syrup can also be used on pancakes, waffles, smoothies, ice cream... literally anything sweet!
Vegan Pumpkin Spice Syrup
Ingredients
50g Pumpkin Puree
100ml Coconut Milk
50g Brown Sugar
1 tsp All Spice
2 Tbsp Maple Syrup
Method
1. Place all ingredients except for the pumpkin puree in a pan and heat on a medium heat for 5-10 minutes, whisking until a caramel thickness is achieved.
2. Pour the caramel into a blender along with 50ml of water and add the pumpkin puree. Blitz until smooth.
3. Pour the sauce back into the pan and heat again for a further 5 minutes until a golden brown syrup is formed. The longer you heat the syrup the thicker it will become. If a caramel-like thickness is desired, heat for 10 minutes.
4. Drizzle over desserts or pour into your morning coffee... delicious!
