Thursday means a sleep in and lighter training load. I spent most of the day doing odd jobs so had heaps of time to make this delicious quinoa, spinach, lentil, tempeh salad with a fresh corn and pepita seed garnish 🥗🌽
Glorious weather in Melbourne today, so taking full advantage and heading down the coast. 🌞🌱
Thoroughly enjoying these Saturday long lunches before Uni and work go back. The sun was just starting to peak through as I sat down for this scrumptious brown rice vegie bowl with tahini dressing 🌞🌱
Tonight's dinner was tofu, sweet potato and chickpea curry! I just bought a bunch of new spices so trying out different flavor combinations :) Ingredients - firm tofu - sweet potato - onion - carrot - brocoli - zucchini - kale :) Spices - medium curry powder - green chili powder - mustard seeds - cumin - tumeric powder - black pepper - asfatedia (used in India to aid digestion)

Vegan Lentil and Bean Chili with a side of tri colour quinoa hiding underneath. 35g+ of protein in that one bowl to fuel my double session from training this morning
