Peanut Noodle Salad . Is there anything better than noodles? I’ll take them in any form: Italian pasta, Asian noodles, Indo-Chinese noodles, macaroni and cheese (vegan, of course), and the list goes on and on. These are all hot and wonderful but which do you choose on a blistering hot, summer day in Atlanta? None. You go with this peanut noodle salad because it’s supposed to be cold and that’s what we love. But don’t get me wrong; just because we want it cold doesn’t mean we don’t want it spicy. I’ve packed this full of flavor and spice with sriracha, red chili flakes, and black pepper. And let’s not forget the delicious medley of fresh veggies and crushed peanuts that add that perfect crunch to this dish. What about the fresh squeeze of lime? Is there anything more refreshing than some cold citrus on a hot day? So many reasons to make this meal immediately! So what are you waiting for? Go on! I’m thankful to God for these healthy and delicious foods!! This is a quinoa bowl I made for the first time! I seasoned the quinoa with salt, vegan butter, and garlic powder. Then I added refried beans (I love the Ducal brand), mashed avocado, corn, and a salsa/pico de gallo mix (from @goyafoods)! Then on the side I have vegan popcorn chicken (from @morningstarfarms) which is AMAZING, and then some sesame seed crackers (from @crunchmastercrackers), but I forgot what flavor it was lol (maybe the regular sea salt one). Then there are teriyaki stir fried vegetables (from @yourtaylorfarms) which is also so good!! For the dipping sauce in the middle, it was the Polynesian Sauce from @chickfila!! Today marks my One Year Veganniversary! For today’s mid-day “snack,” I decided to make myself a celebratory PB and chocolate smoothie bowl.
Smoothie base ingredients:
Frozen bananas
Peanut butter
Cacao powder
Unsweetened vanilla almond milk (I added a bit too much almond milk, but the base was still a good/thick consistency!)

This was supposed to be a grilled cheese but the entire plate is basically a deconstructed cheeseburger. Follow Your Heart American cheese and Gardein ground be’f (sautéed with onions, red peppers, jalapeños, and spices) on 12 grain wheat bread and baked. I also dipped it in ketchup and mustard while I ate it. There’s a lettuce and tomato salad with a quick vinaigrette on the side.
