This hearty black bean and potato soup is great for cold days because it makes you feel warm and cozy. The black beans and potatoes give it a lot of protein and fiber, so it's a good meal for everyone, vegan or not.
Ingredients: 1 can black beans, drained and rinsed. 2 medium potatoes, diced. 1 onion, chopped. 3 cloves garlic, minced. 4 cups vegetable broth. 1 can diced tomatoes. 1 teaspoon cumin. 1 teaspoon chili powder. Salt and pepper to taste. 2 tablespoons olive oil. Fresh cilantro for garnish optional.
Instructions: In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, saut until fragrant. Add diced potatoes and cook for 5 minutes, stirring occasionally. Stir in cumin and chili powder. Pour in vegetable broth and bring to a simmer. Add black beans and diced tomatoes, then season with salt and pepper to taste. Simmer for 20-25 minutes until potatoes are tender. Serve hot, garnished with fresh cilantro if desired.
