Ingredients: 1 medium cauliflower, cut into florets. 1/2 cup gluten-free all-purpose flour. 1/2 cup cornstarch. 1/2 teaspoon salt. 1/4 teaspoon black pepper. 1 cup water. 1 tablespoon soy sauce. 1/4 cup apple cider vinegar. 1/4 cup ketchup. 1/4 cup brown sugar. 1 teaspoon garlic powder. 1/2 teaspoon ginger powder. 1 bell pepper, chopped. 1 onion, chopped. 2 tablespoons vegetable oil. 2 tablespoons cornstarch mixed with 2 tablespoons water to thicken sauce.
Instructions: Preheat oven to 425F 220C. In a bowl, mix gluten-free flour, cornstarch, salt, pepper, and water to create a batter. Dip cauliflower florets into the batter, ensuring they're well coated, then place them on a lined baking sheet. Bake cauliflower for 25-30 minutes, or until crispy and golden brown. While cauliflower is baking, prepare the sweet and sour sauce. In a saucepan, combine soy sauce, apple cider vinegar, ketchup, brown sugar, garlic powder, and ginger powder. Cook over medium heat until the sugar has dissolved. In a separate pan, heat vegetable oil over medium heat. Add chopped bell pepper and onion, saut until they start to soften. Pour the prepared sauce over the sauted vegetables, and add the cornstarch-water mixture. Stir well and let the sauce thicken. Once the cauliflower is done baking, transfer it to a large bowl and pour the sweet and sour sauce over it. Toss until the cauliflower is evenly coated with the sauce.
