Veggie Tacos
I found myself this week in a race against time. I had a large box of produce given to me and have been trying to get thru it before it goes bad. I don't like to waste. I decided to make veggie tacos for dinner tonight. This batch included yellow bell pepper, sweet onion, yellow squash and pico de gallo made from tomatoes, garlic and peppers. These were really good and satisfying.
All you gotta do is heat a little oil in a pan and add the veggies in order of time it takes for them to soften. Hot tip: add coarse salt, it helps pull the moister out of food and speeds up the cooking process.
Lemon and Garlic Broccoli
This broccoli dish is one of the first things I learned to cook and it is still one of my favorite things to eat. It works well as a side for almost anything but is also great as a main with a side of rice.
Ingredients:
1 head of broccoli (per person) stems and florets chopped
2 tablespoons butter
3-4 cloves garlic, minced
2 lemons
Method:
In a large pan melt butter over medium heat
Add broccoli and cook, stirrig occasionally, until it turns bright green
Add garlic and cook, stirring until fragrant, about 1 minute
Add the juice of the lemons and stir to combine.
Cover and cook, stirring often, until broccoli reaches desired level of doneness
That's about it. Try it out sometime. I promise you're gonna love it.
