A quick and easy way to enjoy a hearty breakfast is with these air-fried breakfast muffins. This breakfast food is full of eggs, vegetables, cheese, and your choice of bacon or sausage.
Ingredients: 4 large eggs. 1/4 cup milk. 1/2 cup diced bell peppers. 1/2 cup diced onions. 1/2 cup diced cooked bacon or sausage. 1/2 cup shredded cheddar cheese. Salt and pepper to taste. Cooking spray.
Instructions: In a bowl, whisk together the eggs and milk until well combined. Add the diced bell peppers, onions, cooked bacon or sausage, and shredded cheddar cheese to the egg mixture. Season with salt and pepper to taste. Spray the air fryer basket with cooking spray to prevent sticking. Pour the muffin mixture into silicone muffin cups or silicone muffin liners, filling each about 2/3 full. Preheat your air fryer to 350F 175C. Place the muffin cups or liners in the air fryer basket, making sure they don't touch each other. Air fry for 12-15 minutes or until the muffins are set and golden brown on top. Carefully remove the breakfast muffins from the air fryer and allow them to cool slightly before serving. Enjoy your delicious air-fried breakfast muffins!
