This Easy Quinoa and Veggie Gratin is a nutritious and delicious side dish that's perfect for dinner. Loaded with quinoa, mixed vegetables, and cheesy goodness, it's a satisfying and wholesome addition to any meal.
Ingredients: 1 cup quinoa. 2 cups vegetable broth. 2 cups mixed vegetables e.g., broccoli, cauliflower, carrots. 1 cup shredded cheddar cheese. 1/2 cup grated Parmesan cheese. 2 cloves garlic, minced. 1/2 teaspoon dried thyme. 1/2 teaspoon dried oregano. Salt and pepper to taste. 2 tablespoons olive oil. Fresh parsley for garnish.
Instructions: Preheat your oven to 375F 190C. Rinse the quinoa thoroughly under cold water. In a saucepan, bring the vegetable broth to a boil. Add the rinsed quinoa, reduce heat to low, cover, and simmer for 15-20 minutes, or until the quinoa is cooked and the liquid is absorbed. Remove from heat and let it sit for 5 minutes. While the quinoa is cooking, steam the mixed vegetables until they are slightly tender, about 5-7 minutes. Drain and set aside. In a large bowl, combine the cooked quinoa, steamed vegetables, shredded cheddar cheese, grated Parmesan cheese, minced garlic, dried thyme, dried oregano, salt, and pepper. Mix well to combine all the ingredients. Grease a baking dish with olive oil and transfer the quinoa and vegetable mixture into it. Spread it evenly in the dish. Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and the cheese is bubbly. Remove from the oven and let it cool for a few minutes before serving.
