We had a delicious Saturday! Yes, we cooked Vegetarian Avocado Pesto Pasta. It is easy to do and very tasteful. Do want to know how to do it? Check the recipe bellow:
*Serves 4 persons.
Ingredients:
1 pound linguine
2 avocados
1 bunch fresh basil (or rosemary)
½ cup pine nuts
2 tablespoons lemon juice
½ cup olive oil
3 cloves garlic
Salt
Freshly ground black pepper
Procedures:
Put a large pot of salted water to a boil. Add linguine and cook (for 7 minutes approximately) . Drain and set aside.
Make the pesto by combining basil (or rosemary), pine nuts, avocados, lemon juice, garlic, and oil in a food processor. Process until smooth. Mix it generously with salt and pepper.
Join the pasta with pesto. You can make the plate more beautiful decorating adding a tomato flowers or leaves of mint above the pasta. It's done!
It goes great with carrot juice. Easy peasy, don't you think?
