A delicious vegan bagel featuring vibrant flavors of steamed vinegar kale, crispy sesame tempeh, and creamy avocado schmear.
Ingredients: 1 bagel. 1 cup kale, chopped. 1 tablespoon vinegar. 1/2 block tempeh, sliced. 1 tablespoon sesame oil. 1 ripe avocado. 1 teaspoon lemon juice. Salt and pepper, to taste.
Instructions: Cut the bagel in half and toast it however you like. Steam the kale in a basket until it's soft, then add the vinegar and toss it all together. Put tempeh slices in a pan with sesame oil and heat it over medium-low. Cook until both sides are golden brown. To make the schmear, squash the avocado in a bowl with salt and pepper. Add the lemon juice and mix well. On one half of the bagel, spread the avocado schmear. Put steamed kale and sesame tempeh slices on top of the schmear. Put the other half of the bagel on top and serve.
