Ingredients: 1 1/2 cups all-purpose flour. 1/2 cup cocoa powder. 1/2 cup granulated sugar. 1/2 cup brown sugar. 1 tsp baking powder. 1/2 tsp baking soda. 1/2 tsp salt. 1/2 tsp cinnamon. 2 eggs. 1/2 cup vegetable oil. 1/4 cup plain yogurt. 1 tsp vanilla extract. 1 1/2 cups grated zucchini about 2 medium-sized zucchinis. 1 cup chocolate chips.
Instructions: Preheat your oven to 350F 175C and line a muffin tin with paper liners. In a large bowl, whisk together the flour, cocoa powder, granulated sugar, brown sugar, baking powder, baking soda, salt, and cinnamon. In another bowl, beat the eggs and then mix in the vegetable oil, plain yogurt, and vanilla extract. Add the wet ingredients to the dry ingredients and stir until just combined. Fold in the grated zucchini and chocolate chips into the batter. Divide the batter evenly among the muffin cups, filling each about 2/3 full. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean. Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
