These grilled veggie hummus wraps are a delightful addition to any vegan cookout. Packed with vibrant grilled vegetables and flavorful hummus, they are a perfect balance of healthy and delicious. Plus, they are easy to make and can be customized with your favorite veggies and herbs.
Ingredients: 1 zucchini, sliced lengthwise. 1 yellow squash, sliced lengthwise. 1 red bell pepper, halved and deseeded. 1 red onion, sliced into rounds. 1 cup cherry tomatoes. 1 tablespoon olive oil. Salt and pepper to taste. 4 large whole wheat tortillas. 1 cup hummus. 1/4 cup fresh basil leaves. 1/4 cup chopped parsley. 1 lemon, juiced. 1 clove garlic, minced.
Instructions: Warm the grill up to a medium-high level. Add zucchini, yellow squash, red bell pepper, red onion, and cherry tomatoes to a bowl. Add olive oil, salt, and pepper. Toss to coat. Grill the vegetables for five to seven minutes, or until they are soft and lightly charred. Grill the tortillas for one minute on each side to warm them up. Add the hummus, basil, parsley, lemon juice, and minced garlic to a small bowl and mix them together. Put some of the hummus mix on each tortilla. On top of each tortilla, put some grilled vegetables. Use toothpicks to hold the ends of the tortillas together as you roll them up. Cut the wraps in half and serve them right away.
