This hearty and healthy stew is full of vegetables and quinoa, which is a good source of protein. When you get home from a busy day, you can just put this meal in the slow cooker and come back to a tasty and comforting dinner.
Ingredients: 1 cup quinoa, rinsed. 2 cups vegetable broth. 1 can 15 oz diced tomatoes. 1 onion, chopped. 2 carrots, sliced. 2 celery stalks, chopped. 2 cloves garlic, minced. 1 tsp dried thyme. 1 tsp dried rosemary. Salt and pepper to taste.
Instructions: Put diced tomatoes, onion, carrots, celery, garlic, thyme, and rosemary in a slow cooker. Add the quinoa and stir it around. Add pepper and salt to taste. Cover and cook on low for 6 to 8 hours or high for 3 to 4 hours, until the quinoa is fully cooked and the vegetables are soft. Enjoy while hot!
