Although the day was on Wednesday, I spent the better part of Thursday and Friday prepping a vegetarian meal to celebrate Vesak for my friends!
I made a noodle bowl with Buddha’s Delight and various toppings, a lemongrass coconut and yam soup and for dessert it was a Thai inspired mango coconut rice pudding!
