A fusion twist on the traditional Vietnamese Banh Mi, this sandwich features tender salmon, pickled vegetables, and spicy mayo stuffed into a crusty baguette.
Ingredients: 1 lb salmon fillet, skin removed. 4 mini baguettes or 2 regular-sized baguettes, split lengthwise. 1/4 cup mayonnaise. 2 tablespoons Sriracha sauce. 1 cup pickled vegetables carrots, daikon radish, cucumber. 1/4 cup fresh cilantro leaves. 1 jalapeno, thinly sliced. 1 tablespoon soy sauce. 1 tablespoon rice vinegar. 1 teaspoon sugar. Salt and pepper to taste.
Instructions: Get the oven ready by heating it up to 400F 200C. Soy sauce, rice vinegar, and sugar should all be mixed together in a small bowl. Put salt and pepper on the salmon, and then use the soy sauce mixture to cover it. Put the salmon on a baking sheet that has been lined with parchment paper. Bake for 12 to 15 minutes, or until the salmon is fully cooked. To make spicy mayo, mix Sriracha sauce and mayonnaise in a different small bowl. Put some spicy mayo on the inside of each half of the baguette. Put slices of pickled vegetables, fresh cilantro, and jalapeo on one side of the baguette. Put the salmon on the other side of the baguette after it's done cooking. Put the top on the sandwich and serve right away. Have fun with your tasty Salmon Banh Mi!
