These Carrot Hummus Dumplings are a delightful twist on traditional dumplings. They are filled with a flavorful mixture of grated carrots, chickpeas, tahini, and spices, making them a healthy and tasty appetizer or snack.
Ingredients: 1 cup grated carrots. 1/2 cup cooked chickpeas. 3 tablespoons tahini. 2 cloves garlic, minced. 1 tablespoon lemon juice. 1 teaspoon ground cumin. Salt and pepper to taste. Gyoza or dumpling wrappers. Water for sealing dumplings. Oil for pan-frying. Soy sauce or dipping sauce of your choice.
Instructions: In a food processor, combine grated carrots, cooked chickpeas, tahini, minced garlic, lemon juice, ground cumin, salt, and pepper. Blend until you have a smooth hummus-like mixture. Place a small spoonful of the carrot hummus mixture in the center of each gyoza or dumpling wrapper. Dip your finger in water and moisten the edge of the wrapper to help seal it. Fold the wrapper in half to create a half-moon shape, then press and crimp the edges to seal the dumpling. Repeat this process for all the dumplings. Heat a pan with oil over medium heat. Once hot, add the dumplings and cook until the bottoms turn golden brown. Carefully add a few tablespoons of water to the pan and cover with a lid to steam the dumplings for a few minutes, or until they are cooked through and tender. Remove the lid and let the dumplings cook for an additional minute to crisp up the bottoms. Serve the carrot hummus dumplings hot with your choice of soy sauce or dipping sauce.
