Violet Shortbread Cookie Love Spell🌸
Are you looking to draw a little love into your life? Did you make my violet sugar recipe from a few posts ago and now you’re like “what tf do I do with this”? Wonder no more, as these crunchy sandy shortbread cookies are exactly the spring treat you’ve been waiting for.
Shortbread dough is made with flour, butter, and sugar, and that’s it. No eggs, no binders, or emulsifiers. I think that’s pretty cool! Because of this, however, the dough can be a tricky to work with so you’ll have to exercise a bit of self-compassion as you work with it. Practice loving yourself through the process of making this dough as a missive to the universe to draw love to you!
* 1 cup unsalted room temperature butter (2 sticks/200 grams)
* 1/2 cup granulated violet sugar (105 grams)
* 1/2 teaspoon vanilla extract
* 2 and 1/2 cups all-purpose flour (300 grams)
* 2 tablespoons cornstarch (optional, to keep cookies tender and sandy rather than super crunchy)
* 1/2 teaspoon baking powder
* Cream the butter, sugar and vanilla extract together using an electric mixer/stand mixer until very light and fluffy. About 5 minutes should do it, scraping down the sides as needed.
* Add in the flour, cornstarch, baking powder and salt. Gently mix until the dough just comes together.
* Tip the dough out onto a lightly floured surface, and bring it together and form it into a log which is about 3 inches thick. Wrap the dough log in plastic wrap and place it in the fridge for at least an hour. Or up to 3 days.
* Once you are ready to bake your cookies preheat your oven to 350F and line a large baking sheet with baking parchment or a large silicone mat.
* Slice your cookies to about 1 inch thick and place them on your baking sheet. These cookies will not spread very much.
* Bake them for 18-20 minutes until they are golden brown. Remove them from the oven and transfer them to a wire rack to allow them to fully cool down.
* While they cool, put a rose quartz in your pocket and head out to your nearest patch of violets. Collect a few, mindfully meditating on the kind of love you’d like to draw into your life. Collect as many violets as you like.
* Press your collected violets between two pieces of wax paper, weighed down with a heavy book, for at least an hour, but ideally overnight.
* Make a tiny bit of loose royal icing (powdered sugar and water) to use as glue for your pressed flowers.
* Carefully peel the flowers off the wax paper. Using a clean paintbrush, paint the icing onto the cookie where you’d like to stick your flowers. Press your flowers onto the cookie, et viola!
* Enjoy your cookies and await the arrival of love <3
