Huge chunk of fish and really good quality. Cut the fillet in half and did one half with some spiceology pink peppercorn lemon thyme rub, and did the other one with some maple sugar and Himalayan pink salt. Both smoked on the kamado with some cherry wood from the bush. My first attempt on #beefribs rubbed down with #caribeque #beef rub and a little #montrealseasoning . Round one on the #visiongrills this afternoon on the #cooled #florida day with a high of #56 #degrees. We are smoking up some #amberjack aka the reef donkey a couple different ways. They are all #rub down with #caribeque calypso kick and some have a #traderjoes #mango #salsa and the other is a mango #ginger #chutney. It should be on the #smoker for 2.5 hours at 190 degrees.
