It's common in Japanese to refer to people in ways that aren't explicitly gendered. Eve and Elizabeth are referred to as "they" in the subtitles because nobody else genders them, so the translator had no way of knowing. Eve has been confirmed to be a guy on Twitter and, given the target audience of the series and the fact that all vampires are biologically male, Elizabeth almost certainly is as well.

I explained it to you because I'm tired of people wildly misinterpreting the subtitles and claiming their interpretation is canon. The singular they on its own says nothing about someone's gender; that is in fact its primary purpose, to be genderless. Eve is canonically a man. Elizabeth is canonically a man. Your headcanon is not fact.
