Iapetus 2017 Figure 2: I enjoyed this acid-driven pét-nat (short for Pétillant Naturel) with smoked salmon pinwheels the other day. It’s Vermont-grown (Yes, Vermont!) and made from 100% La Crescent grapes, with flavors of citrus cream, brioche and toasted almond. This tasty natural sparkler definitely deserves a place at the table for any occasion. Washed down bison burgers with this delightful ’17 Figure 3 pétillant naturel (AKA pét-nat) rosé from Iapetus. It’s 100% Vermont-grown Marquette (cold-tolerant red hybrid variety), made using the saignée method. Today, wine is produced in all 50 U.S. states, and it is great fun finding exciting wines from unexpected places (trust me). Chris Granstrom from @lincolnpeak in Vermont started out as a farmer - working on a dairy farm, in an apple orchard and even growing strawberries on his land. That changed in 2001 when he discovered varietals hardy enough for Vermont’s winters. His vineyard in Middlebury started with a shoebox of grapevine cuttings and grew from there (pun intended).
