Cherry Spinach Salad
This salad contains lots of greens and sliced Red Delicious apples with a sprinkling of toasted almonds. But the dressing is a bit fancier. Cranberries, onions, sugar, and mustard are pureed in the blender with balsamic vinegar and oil, then added to the salad so that it perfectly coats every leaf of lettuce and slice of apple.
Apple Walnut Salad with Cranberry Vinaigrette This salad has a ton of greens, sliced Red Delicious apples, and toasted almonds on top. However, the dressing is more elaborate. Balsamic vinegar, oil, and other ingredients are blended with cranberries, onions, sugar, and mustard before being added to the salad to ensure that every lettuce leaf and apple slice are evenly coated.
Avocado Walnut Salad
Avocados…walnuts…butter lettuce…all are my weakness and great together in this healthy salad. My local grocer carries butter lettuce with the root attached in a plastic clam shell container. The attached roots are fun and keep the butter lettuce fresher longer but at our house it’s consumed so quickly that it’s not a concern around here. Throw in a diced crunchy apple for a change of pace. Try this recipe and see what you think…
Dressing:
¼ c. olive oil
2 T. white wine vinegar
½ t. garlic powder
¼ t. oregano
1/8 t. ground black pepper
Salad fixings:
4 c. iceberg lettuce, chopped
1 head butter lettuce, chopped
2 lg. avocados, peeled, pitted, chopped
¾ c. walnuts, chopped
Option: Diced crunchy apple
In a small bowl, mix together oil, vinegar, garlic powder, oregano, pepper - set aside. In a large mixing bowl, add iceberg lettuce, butter lettuce, avocados, and walnuts. Toss salad fixings together. Pour dressing over all, toss well. Serve immediately.
