Ingredients: 1/2 cup rolled oats. 2 1/2 cups all-purpose flour. 1 1/2 teaspoons baking soda. 1/4 teaspoon salt. 1/4 teaspoon cinnamon. 1 cup unsalted butter, softened. 3/4 cup granulated sugar. 3/4 cup packed light brown sugar. 1 1/2 teaspoons vanilla extract. 1/2 teaspoon lemon juice. 2 large eggs. 3 cups semi-sweet chocolate chips. 1 1/2 cups chopped walnuts.
Instructions: Start by heating the oven to 350F 175C. Use a food processor or blender to make the rolled oats very fine. Mix the oats that have been blended with the flour, baking soda, salt, and cinnamon in a medium-sized bowl. Mix the butter, light brown sugar, vanilla extract, and lemon juice in a separate large bowl until the mixture is light and fluffy. Before adding the eggs, beat them in one at a time. Slowly add the dry ingredients to the wet ones and make sure everything is well mixed. Add the chocolate chips and chopped walnuts and mix them in. Place rounded tablespoons of cookie dough about 2 inches apart on baking sheets that have not been greased. After the oven is hot, bake the cookies for 10 to 12 minutes, or until the edges are golden brown. After taking the cookies out of the oven, let them cool for a few minutes on the baking sheets before moving them to wire racks to cool all the way.
