Ingredients: 2 oz 57g semi-sweet chocolate, chopped. 1/4 cup 56g unsalted butter. 1/2 cup 60g powdered sugar. 1/4 cup 30g all-purpose flour. 1/4 tsp salt. 1/2 tsp vanilla extract. 2 large eggs. Cooking spray or extra butter for greasing ramekins. Powdered sugar and fresh berries for garnish optional.
Instructions: Preheat your oven to 425F 220C. Grease two 4-ounce 120ml ramekins with cooking spray or butter and dust them with cocoa powder or flour. Tap out any excess. In a microwave-safe bowl, combine the chopped semi-sweet chocolate and unsalted butter. Microwave in 20-second intervals, stirring each time, until the mixture is melted and smooth. In a separate bowl, whisk together the powdered sugar, all-purpose flour, and salt. Pour the melted chocolate mixture into the dry ingredients, add the vanilla extract, and mix until well combined. Beat the eggs in a small bowl and then add them to the chocolate mixture. Stir until the batter is smooth and glossy. Divide the batter evenly between the prepared ramekins. Bake in the preheated oven for about 12-14 minutes, or until the edges are set but the center is still slightly jiggly. Remove the lava cakes from the oven and let them cool for a minute or two. Use a knife to loosen the edges, then invert each lava cake onto a serving plate. Dust with powdered sugar and garnish with fresh berries if desired.
