Warm and comforting, this Super Cozy Vegetarian Lentil Minestrone is packed with protein-rich lentils, nutritious vegetables, and flavorful herbs. Perfect for chilly days or when you need a nourishing meal!
Ingredients: 1 cup dried green lentils, rinsed. 4 cups vegetable broth. 1 can 14.5 oz diced tomatoes. 1 onion, diced. 2 carrots, diced. 2 celery stalks, diced. 2 cloves garlic, minced. 1 teaspoon dried oregano. 1 teaspoon dried thyme. 1 teaspoon dried basil. 1/2 teaspoon smoked paprika. Salt and pepper to taste. 2 cups chopped spinach or kale. 1 cup small pasta like ditalini or elbow macaroni. 2 tablespoons olive oil.
Instructions: Put olive oil in a big pot and heat it over medium-low heat. Toss in the chopped onion, carrots, and celery. For about 5 minutes, or until softened, saut. Add smoked paprika, dried herbs, salt, and pepper, and mix them in. Go on and cook for two more minutes. Put in lentils that have been rinsed, vegetable broth, and diced tomatoes that have their juices added. Bring up the temperature. Turn down the heat, cover, and let it cook for 20 minutes, or until the lentils are soft. Place chopped spinach or kale and pasta in a bowl. Add 10 minutes more of cooking time or until the pasta is al dente. If necessary, change the seasoning. If you want, you can serve it hot and top it with fresh herbs.
