Ingredients: 1 cup unsalted butter, softened. 2 cups granulated sugar. 2 large eggs. 1 teaspoon vanilla extract. 2 teaspoons lemon zest. 2 tablespoons fresh lemon juice. 1/2 teaspoon salt. 1/2 teaspoon baking powder. 1/4 teaspoon baking soda. 3 cups all-purpose flour. 1/2 cup powdered sugar for rolling.
Instructions: Preheat the oven to 350F 175C and line baking sheets with parchment paper. In a large bowl, cream together the butter and granulated sugar until light and fluffy. Beat in the eggs, one at a time, then stir in the vanilla extract, lemon zest, and lemon juice. Mix in the salt, baking powder, and baking soda until well combined. Gradually add the flour, mixing until just incorporated. Chill the dough in the refrigerator for about 30 minutes to firm it up. Scoop tablespoon-sized portions of dough and roll them into balls. Roll each dough ball in powdered sugar to coat generously. Place the coated dough balls on the prepared baking sheets, spacing them about 2 inches apart. Bake in the preheated oven for 10-12 minutes, or until the edges are set but the centers are still slightly soft. Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely. Once cooled, the cookies are ready to be enjoyed!
