Instructions: Soy sauce, olive oil, white vinegar, and brown sugar should all be mixed together in a bowl. Mix well until the sugar is gone. Garlic, ginger, Scotch bonnet pepper, black pepper, nutmeg, and cinnamon should all be added. Make a thick paste by mixing. To make sure the marinade covers all of the chicken thighs, poke holes in them with a fork and rub it on each one. Add salt to your liking. Put it in the fridge with the lid on for at least 4 hours, or overnight for a stronger flavor. Warm up the grill over medium-high heat. Take the chicken out of the marinade and let the extra run off. Turn the chicken thighs over every so often on the grill for 20 to 25 minutes, or until they are fully cooked and have a nice char on the outside. Enjoy your tasty Jerk Chicken while it's still hot!
