Ingredients: 1 1/2 cups all-purpose flour. 1/2 cup brown sugar. 1/4 cup molasses. 1/4 cup unsalted butter, melted. 1/4 cup milk. 1 egg. 1 teaspoon ground ginger. 1/2 teaspoon ground cinnamon. 1/4 teaspoon ground cloves. 1/4 teaspoon ground nutmeg. 1/2 teaspoon baking soda. 1/2 teaspoon baking powder. 1/4 teaspoon salt. 1/4 cup chopped crystallized ginger optional. Powdered sugar for dusting optional.
Instructions: Preheat your oven to 350F 175C and line a muffin tin with paper liners. In a large mixing bowl, combine the flour, brown sugar, ground ginger, ground cinnamon, ground cloves, ground nutmeg, baking soda, baking powder, and salt. In another bowl, whisk together the molasses, melted butter, milk, and egg until well combined. Pour the wet ingredients into the dry ingredients and stir until just combined. If desired, fold in the chopped crystallized ginger for extra flavor. Divide the muffin batter evenly among the prepared muffin cups. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Remove the muffins from the oven and allow them to cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
