Some #wednesdaycooking this week! I made the Pork Chops with Cranberries and Pears from the November issue of @betterhomesandgardens 🍐It was very easy to make - I had a little too much Maillard reaction when browning the chops (probably too much brown sugar on the rub, lol) and had to scrub out the cast iron pan with salt to get the burned-on bits off after 😬 The hardest part was trying not to gobble it down while getting the pan sauce to reduce because the chops baked up juuuust right in the oven 🤤 Since I don’t use or eat onions, I doubled the pears in the recipe to 4, which was probably too much. A little #wednesdaycooking #turshentakeover! This is a favorite of mine from @turshen Small Victories cookbook - sausage and orecchiette pasta (yum yum!!). The hardest part of this recipe is getting the dratted sausage out of its casings and into the Dutch oven to cook 😹 My sous chefs would like to lodge a complaint that they were not given ANY sausage as a treato. Because Sunday was kind of busy and Monday I was just eating my “got my COVID shot and now I’m a grouchy toddler” Reese’s PB cup Blizzard and Tuesday night I worked at the store so we have #wednesdaycooking #weeknightcooking! I made another recipe from @turshen‘s new cookbook Simply Julia: sticky chicken! Loved it! I don’t do very spicy, so I only used a little bit of red chili paste but you could easily dial up the heat or use firm tofu instead of chicken. I did a little #wednesdaycooking - I had always planned on making a quiche later this week once I finished the leftovers of the leek tart. However, since the leftovers got tossed due to power outage (didn’t pass the smell test) I moved quiche-making up to today. I use Ruth Reichl’s recipe. A little #wednesdaycooking this week (y’all, being home every day all day is an extremely weird switch for someone who normally works 80-ish hrs/week so there’s going to be a lot of cooking). This is @turshen frittata from p82 of Now & Again, but instead of mushrooms and thyme I did the cherry tomatoes, basil, and Italian sausage variation. (And, since I don’t actually own a sheet pan I did this in a 9xwhatever cake pan - it worked out great, just had to cook another 7-ish minutes to get the middle to set) Super yummy!
