The classic French crepes are made with less fat in these Weight Watchers crepes, which makes them great for people who are watching their weight. There are many low-calorie toppings that can be put on them, and they are easy to make.
Ingredients: 1 cup all-purpose flour. 1 1/2 cups skim milk. 2 large eggs. 1/4 teaspoon salt. 1/2 teaspoon vanilla extract. Cooking spray or oil for greasing.
Instructions: Put the all-purpose flour and salt in a bowl and mix them together. Whisk the skim milk, eggs, and vanilla extract together in a different bowl until everything is well mixed. Pour the wet ingredients into the dry ingredients slowly while whisking all the time to make a smooth batter. Warm up a crepe pan or nonstick skillet over medium heat. Use cooking spray or a little oil to barely coat the pan. Pour 1/4 cup of the crepe batter into the hot pan and swirl it around to cover the bottom evenly. When the bottom is golden brown and the edges start to lift, it's done cooking. With a spatula, carefully flip the crepe over and cook the other side for another minute or two, until it's fully cooked and lightly browned. Do the same thing with the rest of the batter, adding more oil or cooking spray to the pan as needed. If you're on Weight Watchers, you can fill the crepes with your favorite things like low-fat yogurt, fresh fruit, or sugar-free syrup.
