Ingredients: 1 cup all-purpose flour. 2 cups granulated sugar. 1 teaspoon baking soda. 1/2 teaspoon salt. 2 large eggs. 1/2 cup sour cream. 1 teaspoon almond extract. 1 cup unsalted butter. 1 cup water. 1 cup whole milk. 1 package instant vanilla pudding mix. 1 1/2 cups heavy cream. 1/4 cup powdered sugar. 1 teaspoon vanilla extract. Sliced almonds for garnish. Fresh berries for topping.
Instructions: Preheat oven to 350F 175C and grease a baking sheet. In a large mixing bowl, combine flour, sugar, baking soda, and salt. In a saucepan, bring butter and water to a boil. Add to the flour mixture and stir until well combined. Add eggs, sour cream, and almond extract to the batter. Mix until smooth. Pour the batter into the prepared baking sheet and bake for 22-25 minutes or until a toothpick inserted comes out clean. While the cake is baking, prepare the vanilla pudding according to package instructions and let it chill in the refrigerator. Once the cake is done, let it cool completely before cutting it into small cubes. In a separate bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. In serving glasses, layer the cake cubes, vanilla pudding, and whipped cream. Repeat the layers and top with sliced almonds and fresh berries.
