i once read a long academic article talking about the history of jewish people and chinese food, it was a bit NYC-centric but very interesting! while staying open on christmas is part of it, theres also the fact that a lot of other ethnic restaurants were obviously christian in other ways (italian restaurants full of catholic imagery, for example) and disdainful of jewish customers in general. Additionally, Chinese food was more likely to be kosher in terms of the types of dishes available (if not necessarily the ways they were prepared) and the owners welcoming to everyone and less likely to care if somebody was jewish or christian. all of this led to chinese restaurants in new york becoming a popular hangout spot for jewish youth and chinese food becoming part of their identity in a way that probably spread to a lot of other places!
