This creamy and tangy red pepper white bean dip is great for parties and get-togethers. The white beans give it a lot of protein and fiber, and it doesn't have any gluten. The roasted red pepper gives the dip a great smoky sweetness.
Ingredients: 1 can 15 ounces white beans, drained and rinsed. 1 roasted red pepper, peeled and seeded. 2 cloves garlic. 2 tablespoons lemon juice. 2 tablespoons olive oil. Salt and pepper to taste. Optional: pinch of cayenne pepper or paprika for extra kick. For serving: sliced vegetables, gluten-free crackers, or tortilla chips.
Instructions: Put roasted red pepper, garlic, lemon juice, and olive oil in a food processor and blend them together. Mix until it's creamy and smooth. To taste, add salt, pepper, and cayenne pepper or paprika if you want. Mix it again to mix in the seasoning. Place the dip in a bowl for serving and put it in the fridge for at least 30 minutes to let the flavors mix. Put it in the fridge and serve it with tortilla chips, gluten-free crackers, or sliced vegetables.
