These crepes are a tropical delight, filled with the flavors of key lime, coconut, and macadamia nuts. They make for a delicious and refreshing dessert.
Ingredients: 1 cup all-purpose flour. 2 tablespoons sugar. 1/4 teaspoon salt. 2 large eggs. 1 cup milk. 2 tablespoons melted butter. Zest of 2 key limes. 1/4 cup key lime juice. 1/4 cup sweetened shredded coconut. 1/4 cup chopped macadamia nuts. Whipped cream for topping. Additional shredded coconut and lime zest for garnish.
Instructions: Put the all-purpose flour, sugar, and salt in a bowl and mix them together. Add the eggs, milk, melted butter, key lime zest, and key lime juice to a different bowl and mix them together using a whisk. Slowly add the wet ingredients to the dry ones while whisking all the time to make a smooth batter. Do not forget to add the chopped macadamia nuts and sweetened shredded coconut. Put a crepe pan or nonstick skillet on medium heat and lightly grease it with oil or butter. Add 1/4 cup of the crepe batter to the pan and swirl it around to make a thin crepe that's spread out evenly. It's done when the edges start to lift and the bottom is a light golden brown color. After that, turn the crepe over and cook for another one to two minutes on the other side. Take the cooked crepe out of the pan and do it again with the rest of the batter, making sure to grease the pan as needed. Let the crepes cool a bit after they are all done cooking. Put some of the key lime coconut macadamia filling in the middle of each crepe. Then, fold the sides over to make a triangle or roll them up. Add a dollop of whipped cream to the top of each crepe and decorate with more coconut flakes and lime zest. Enjoy your Key Lime Coconut Macadamia Tart Crepes!
