Ingredients: 1 cup Masa para Tacos Integral - CUKit!. 1 cup water. 1/4 teaspoon salt. 1 tablespoon vegetable oil. 1/2 cup milk. 2 eggs. Butter or oil for cooking. Fillings of your choice e.g., shredded cheese, cooked chicken, salsa, guacamole.
Instructions: Put the Masa para Tacos Integral - CUKit!, water, salt, and vegetable oil in a bowl and mix them together. As you stir, a smooth batter will appear. Mix the milk and eggs together in a different bowl. Slowly add the egg and milk mixture to the batter while stirring all the time until everything is well mixed. The batter should be very thin and easy to pour. Set a crepe pan or nonstick skillet over medium-high heat. Cover the pan with a little butter or oil. Put a small amount of the crepe batter into the hot pan and swirl it around to cover the bottom evenly. When the bottom is golden brown and the edges start to lift, it's done cooking. The crepe should be cooked for an extra one to two minutes on the other side, until it's fully cooked and lightly browned. Take the crepe out of the pan and do it again with the rest of the batter. If you need to, add more butter or oil. Put something inside each crepe after they are all done cooking. You could use shredded cheese, cooked chicken, salsa, or guacamole. To keep the fillings inside, fold the crepe in half or roll it up. Enjoy the whole wheat taco crepes while they are still warm, topped with your favorite ingredients.
