I still can't believe how badly the show fumbled them ;_;
The thing you don’t realize is that Jack had the option for immortality about three times and twice he sacrificed it, his dream, what he desired above all else, for Will and Elizabeth. The coins? He could’ve lived forever. Not a fulfilling life, but Jack fears death. He would have taken it. But he chose to throw the coin back, to save Elizabeth. When he had the heart of Davy Jones he could’ve stabbed it. Captained the Flying Dutchman and been immortal. But at the cost of wills life. And he wasn't willing to do that. So he gave it to Will to stab.
