There is a word in Italian - ripasso - that means, quite plainly, passed through again. Not reinvented. Not reborn. Simply run through a second time, the way light passes through the same window in the afternoon that it passed through in the morning, landing differently on the floor.

The method is technical: a finished Valpolicella, already itself, already decided, is poured over the dried grape skins left behind by Amarone production. Two weeks. The wine absorbs residual sugars, tannins, a borrowed gravity. It emerges changed - not a different wine, but a deeper version of the one it already was.

Szymborska once wrote about the miracle of the ordinary - how the word 'is' opens onto everything. The word 'ripasso' does something similar. It is not a grape variety. It is not a place. It is a gesture - a decision to return.

The place is the Valpolicella valley, province of Verona, Veneto, northern Italy. A region that has been making wine since before it thought of keeping records. The denomination here is DOC Superiore - which in the grammar of Italian wine law means: higher minimum requirements, longer ageing, stricter controls. Not a marketing term. A regulatory category.

The grapes are Corvina, Corvinone, Rondinella - the classical triad of this valley. Each brings something different. Corvina gives fruit and structure. Corvinone extends depth. Rondinella adds freshness, a certain restraint. Together they produce the dark cherry and dried plum aromatics, the chocolate note that arrives quietly, the spiced finish that stays longer than expected.

Alcohol: approximately 14%. Serving temperature: 16 to 18 degrees Celsius, as tradition in the region holds.

The producer is Le Clive Escalo - a small estate from Verona, working within this denomination without spectacle.

In Poland, where I write this, there are mountains in the southeast called the Bieszczady - low, forested, empty in the best possible way. People go there to sit with books and fog. The wine culture there is young - Polish viticulture is only beginning to find its footing - but the appreciation for something slow, something that took time to become itself, is not.

Ripasso is, in some sense, a philosophical position. It argues that what already exists can be passed through something older and emerge with more. Not replaced. Not erased. Enriched by contact with a richer past.

There are worse arguments to make over a glass of dark wine on a quiet evening.

Le Clive Escalo Valpolicella Ripasso Superiore DOC. 750ml. From a small vineyard near Verona, by way of a method that has been refining itself since the nineteenth century and was popularised commercially in the 1980s - which means it is both ancient in instinct and modern in execution.

Some call it the poor man's Amarone. Others call it Amarone without the bureaucracy. The wine itself does not appear to have an opinion on the matter.

Obiekt był bombardowany w 1999 r. przez NATO, a został otwarty dla zwiedzających w 2017 roku. Warto sprobowac bialego wina Krstac (występuje tylko w tym regionie), czerwonego Vranec (beczkowane 2 lata) i Małmazja (Malvasia), wytrawne, ale z nutami kwiatowymi i wyczuwalnej słodyczy.
