Just treated Steve to his first taste of velvet shank mushrooms we discovered on our usual dog walk route today. They’re a winter staple for foragers being one of the few fungi that will survive freezing conditions. I sautéed them in a little butter and they tasted delicious. Kind of nutty and fruity and pleasantly different. I left a few to grow a bit more for picking later. Maybe wild mushrooms as a part of Christmas Day dinner?
