This Warm Kale and Caramelized Wild Mushroom Salad is a delightful combination of earthy flavors and textures. The sautéed wild mushrooms add a rich, savory element to the hearty kale, while the balsamic vinegar adds a tangy kick. Topped with toasted pine nuts and Parmesan cheese, this salad is a perfect side dish or light meal.
Ingredients: 6 cups fresh kale leaves, chopped. 1 cup wild mushrooms, sliced e.g., shiitake, oyster. 2 tablespoons olive oil. 1/4 cup balsamic vinegar. 1/4 cup toasted pine nuts. 1/4 cup grated Parmesan cheese. Salt and pepper to taste.
Instructions: In a large skillet, heat olive oil over medium heat. Add sliced wild mushrooms and saut until caramelized, about 5-7 minutes. Season with salt and pepper. In a separate small pan, toast pine nuts over low heat until they turn golden brown. Set aside. In a large salad bowl, combine chopped kale leaves and caramelized wild mushrooms. Drizzle balsamic vinegar over the salad and toss to combine, ensuring the kale wilts slightly from the warmth of the mushrooms. Sprinkle toasted pine nuts and grated Parmesan cheese over the salad. Serve warm and enjoy!
