This Winter Pasta is a warm and comforting dish that is great for cold nights. There is hearty butternut squash, earthy mushrooms, and fragrant thyme in it, along with al dente pasta and a sprinkle of Parmesan cheese on top.
Ingredients: 300g pasta of your choice. 2 tablespoons olive oil. 2 cloves garlic, minced. 1 small red onion, thinly sliced. 200g mushrooms, sliced. 1 cup diced butternut squash. 1 teaspoon dried thyme. Salt and black pepper to taste. 1/2 cup vegetable broth. 1/4 cup grated Parmesan cheese. Fresh parsley for garnish.
Instructions: Follow the directions on the package to cook the pasta until it is al dente. Remove the water and set it aside. Warm up the olive oil in a big pan over medium-low heat. When you add the minced garlic and sliced red onion, saut until the garlic smells good and the onions are clear. Put butternut squash and mushrooms in the pan. Make sure the mushrooms turn golden brown and the butternut squash is soft. Add salt and black pepper, along with the dried thyme. Add the vegetable broth and let it cook for a few minutes, until it gets a little less thick. Toss the cooked pasta with the vegetable mixture in the skillet until everything is well mixed. Grate some Parmesan cheese over the pasta and toss it again to coat it. Before serving, sprinkle with fresh parsley. Enjoy while hot!
