Ingredients: 1 Grill with Lid. 1 Bag of Charcoal. 1 Meat of Your Choice e.g., Brisket, Ribs, Chicken. 1 Wood Chunks or Chips e.g., Hickory, Mesquite, Apple. 1 Aluminum Foil.
Instructions: To begin, light the charcoal in the grill and allow it to burn until it is completely covered in ash. To keep wood chunks or chips from burning too quickly, soak them in water for at least half an hour. When the charcoal is ready, place coals on one side of the grill and leave the other side empty to create a two-zone fire. This makes it possible to cook both directly and indirectly. For added smoke flavor, add soaked wood chunks or chips to the charcoal. Try varying the wood you use according to the type of meat you are cooking. Use your preferred marinade or rub to season the meat. Put it on the grill's indirect side. To regulate airflow, make sure the vents are partially open before closing the grill lid. Throughout the smoking process, keep the temperature constant at between 225 and 275 degrees Fahrenheit. Vents can be adjusted as needed. Using a thermometer, determine the internal temperature of the meat. The size and type of meat determine the cooking time. After the meat is cooked to your preferred doneness, take it off the grill and give it a few minutes to rest.
