Takasago Gosakata yamahai daiginjō nama genshu Fuji-Takasago-shuzō, Fujinomiya-shi Shizuoka The staff in this brewery's shop were lovely and helped me navigate the wide range of products available with generous tasting. Of course my favorite turned out to be the slightly expensive, limited sake with only 3 bottles remaining! Clear and slightly yellow, subtle aromas of banana, Japanese plum, and cheddar. With high alcohol of 19%ABV, it is viscous and heavy undiluted with strong alcohol heat. Diluted with 20% water, it becomes refreshing, creamy, with muscular umami and flavors of banana and creme brule. Even so, it retains an extremely spicy and long-lasting finish with lactic acid tang accentuating. Serve slightly below room temperature for best flavors. So as not to clash, pair with rich foods without strong flavors of their own, like maguro, sea bream, flounder, pate, or veal.
