The symbol Fletcher’s wearing is the Tree of Life with entwined lovers, the supposedly Celtic design. While the tree is widespread among many cultures, its main idea stays generally the same: it means balance and harmony, and the lovers are the ones who will repopulate the world once it’s over someday.

Ray’s wearing a crest ring with a heraldic naiant dolphin and an indistinguishable motto (niant means the dolphin is swimming horizontally; the golden ring on the last pic is just an example of what it could look like since we don’t get a clearer view in the movie). It’s a hereditary thing, meaning Raymond comes from an old English family. The dolphin was often called the King of the Sea, and some sources say it means kindness and charity.
