Super Easy Yeast Dinner Roll Recipe
So, I love serving fresh rolls with the food that I make. Also, I typically don't want to start prepping a side dish several hours ahead of time. I did some experimenting and came up with this recipe. It's super easy, and beginner friendly, for those of you that haven't made bread before. These go well with just about any meal, there's basically no prep work compared to other yeast roll recipes, you don't need a stand mixer or a bread hook, and it's just a simple, tasty addition to your meal. I find that they go best with comfort foods, soups, fried entrees, etc. This isn't a health food lol.
Ingredients
1 packet of rapid rise yeast (about 2 1/4 tsp if you're using a container instead of packets)
Flour. I'm not gonna say exactly how much but about 3-ish cups in total. I dont usually measure it. You can add more or use less if needed. Don't stress.
2-4 tbsp sugar depending on your preference. I use 2 but when my parents are over for dinner, I use 4 because they like a sweeter roll
1/2 tsp salt
1 1/3 cups milk (you can do half milk, half water if you're strapped for groceries, I've done it and it was fine)
3 tbsp butter for mixing, about 1 tbsp for the tops after baking, which is optional but truthfully optimal for that pretty coloring and shine
Optional: any type of coarse salt, I use pink Himalayan, herbs if you want
*You will need a bowl, a whisk or fork, a greased metal cake pan or cookie sheet (use butter to grease), a floured countertop, and saran wrap. You can use a hand mixer if you like but honestly I find that it just makes a mess.*
Directions
*Before you start, set your oven to 350F and grease your pan.*
Put your milk and butter in a microwave safe container (I use the measuring cup) and heat it until the butter melts. Let it cool until it is very warm but not scalding hot, or it will kill your yeast.
Combine your yeast, about 1.5 cups of flour, your sugar, and salt in a large mixing bowl. Mix well with whisk/fork.
Pour in your milk and butter concoction.
Mix well with fork or hand mixer until thoroughly combined (about 2 or 3 minutes with the mixer, use your judgement with the fork)
Slowly begin adding more flour as you mix. At this point the fork is more trouble than it's worth. Stick your hands in and squish it all together repeatedly. Fold it, mash it, make it work. You want a soft dough. Not wet but not dry either. A nice medium.
Flour your countertop or workspace. Knead the dough for about 10 minutes (sometimes less) just until its smooth and elastic.
Put that dough ball back in the bowl, put saran wrap on top, and set it on the stovetop. When it doubles in size, it's done resting. Usually takes about 15 minutes. Go do something else, take a break, practice your breathing, smile at yourself in the mirror.
8. DON'T THROW THAT SARAN WRAP AWAY YET. Separate your dough into balls. I do 8. Starting in the middle, make a circle with them in your pan/sheet. They all need to touch on the sides. Put the used saran wrap on your pan and put it back on the stove. Wait about 30 minutes. Watch a show, paint your toenails, kiss your pets.
Take the wrap off and toss it. Now you can add your optional herbs to the top. Put those bad boys on the top rack and set a timer for 25 minutes.
Pull them out, brush them with butter, sprinkle your optional coarse salt on top. Eat the fuck out of them because they're delicious and YOU MADE THEM. Careful, they're hot 😊
