Za’atar Chicken
I recently processed some of the sumac I gathered into powder to use in za’atar and other seasoning. Since I’ll be having so much za’atar on hand this autumn I decided to make something besides za’atar bread and found a recipe for chicken for dinner last night.
I made pitas to go with it, using the same recipe as when I make za’atar bread. This is a very easy yeast flat bread with 10 minutes of kneading and 45 minutes rising time.
I also came up with a very simple sauce and onion salad to dress the pita sandwiches. For the salad I combined half a sliced onion with two tablespoons of olive oil, 2 tsp lemon juice, 1 tsp sumac, 1 tsp pepperweed pods, and salt.
For the sauce I combined about a 1/3 cup yogurt with a little lemon juice, garlic and dried dill weed. I have to admit I didn’t really measure anything, but just quickly threw it together.
Foraged sumac and pepperweed were both used in the onion salad
Had paid time off on Friday, so I spent the morning making cinnamon rolls- I love how well they turned out too!
