Ingredients: 2 boneless, skinless chicken breasts, thinly sliced. 1 red bell pepper, sliced. 1 yellow bell pepper, sliced. 1 green bell pepper, sliced. 1 small broccoli florets. 1 carrot, julienned. 3 cloves garlic, minced. 2 tablespoons vegetable oil. 2 tablespoons soy sauce. 1 tablespoon oyster sauce. 1 teaspoon cornstarch. Salt and pepper to taste. Sesame seeds for garnish optional.
Instructions: In a small bowl, mix soy sauce, oyster sauce, cornstarch, salt, and pepper. Set aside. Heat vegetable oil in a large skillet or wok over high heat. Add minced garlic and stir-fry for 30 seconds until fragrant. Add thinly sliced chicken breasts and cook until no longer pink, about 3-4 minutes. Remove chicken from the skillet and set aside. In the same skillet, add more oil if needed, and stir-fry the bell peppers, broccoli, and carrot for 4-5 minutes until they begin to soften but remain crisp. Return the cooked chicken to the skillet and pour the sauce mixture over the ingredients. Stir-fry for an additional 2-3 minutes until the sauce thickens and coats the ingredients evenly.
