Burrito Lasagna is a great fusion dish that combines the tastes of lasagna and burritos into one hearty meal. The layers of meat and cheese will make everyone full, so it's great for feeding a lot of people.
Ingredients: 1 lb ground beef. 1 onion, chopped. 1 bell pepper, chopped. 2 cloves garlic, minced. 1 packet taco seasoning. 1 can 15 oz black beans, drained and rinsed. 1 can 15 oz corn, drained. 1 can 15 oz diced tomatoes. 1 cup sour cream. 2 cups shredded cheddar cheese. 6 large flour tortillas. Sliced green onions and chopped cilantro for garnish.
Instructions: Preheat your oven to 375F 190C. In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat. Add chopped onion, bell pepper, and minced garlic to the skillet. Cook until the vegetables are tender. Stir in the taco seasoning, black beans, corn, and diced tomatoes. Simmer for 5-7 minutes. In a greased 9x13-inch baking dish, layer 2 flour tortillas at the bottom. Spread half of the beef and vegetable mixture over the tortillas. Top with half of the sour cream and half of the shredded cheddar cheese. Repeat the layers with 2 more tortillas, the remaining beef mixture, sour cream, and cheddar cheese. Finish with the remaining 2 tortillas on top, and sprinkle the remaining cheddar cheese over the final layer. Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly. Remove from the oven and let it sit for a few minutes before serving. Garnish with sliced green onions and chopped cilantro. Serve hot, and enjoy your delicious Burrito Lasagna!
