Lechon asado, or slow-roasted pork shoulder or butt that has been marinated in mojo, is a flavorful and tantalizing dish. The meat is infused with amazing flavor by the zesty marinade made with garlic, cumin, and herbs. This classic Cuban dish is ideal for a celebratory meal or any day you want to enjoy the flavor of Cuba.
Ingredients: 4-5 pounds pork shoulder or pork butt. 1 cup sour orange juice you can substitute with 1/2 cup orange juice and 1/2 cup lime juice. 8 cloves garlic, minced. 1 teaspoon cumin. 1 teaspoon dried oregano. 1 teaspoon salt. 1/2 teaspoon black pepper. 1/4 cup olive oil. 1 large onion, thinly sliced. 2 bay leaves. 2 tablespoons fresh cilantro, chopped optional. 2 tablespoons fresh parsley, chopped optional.
Instructions: The sour orange juice or orange juice and lime juice, dried oregano, cumin, minced garlic, salt, and black pepper should all be combined in a bowl. To make the marinade, thoroughly mix. Put the pork shoulder or butt in a shallow dish or a sizable plastic bag that can be sealed. Make sure the meat is completely covered by pouring the marinade over it. Refrigerate for a minimum of 4 hours, preferably overnight, after sealing the bag or covering the dish. Set the oven temperature to 325F 163C. Heat the olive oil in a large roasting pan or Dutch oven that is ovensafe over medium-high heat. After taking the marinated pork out of the fridge, give it roughly half an hour to come to room temperature. Add the bay leaves and sliced onion to the pan once the oil is hot. Simmer the onions until they are fragrant and translucent. Top the onions in the Dutch oven with the marinated pork. Over the meat, drizzle any leftover marinade. Place a lid or aluminum foil over the Dutch oven and place it in the oven that has been preheated. The pork should be roasted for three to four hours, or until it is fork-tender. After the pork is cooked, take it out of the oven and give it some time to rest. Then, use two forks to shred the meat. If preferred, sprinkle some fresh parsley and cilantro over the shredded pork.
