天橋立名物 カニ雑炊 // CRAB ZOUSUI @ AMANOHASHIDATE Zousui (literally ‘mixed cooking’) is a soup made with cooked rice and various other ingredients. I was gonna get it with clams, which Amanohashidate is better known for, but the menu said this was a local specialty too and crab sounded more appealing. It also came with much more crab meat than I expected! The rice and egg gave me lots of energy for an afternoon of biking along the sandbar and around the town.

Zousui (雑炊) is a rice-based Japanese soup. I was first introduced to it as “Japanese risotto” (which is kind of a wild way to think about it, looking black). It’s often made with the broth left over after hotpot, adding ingredients like egg and cheese to thicken it and change the flavor.
Zosui is a mild and comforting Japanese rice soup cooked in a savory dashi broth with vegetables, eggs, mushrooms, and chicken or seafood.
Added a bit of vegetable stock as well. Simmer on low, don't overboil
